Festive Sprouts with Pancetta

Serves: 4 Cooking Time: 20 mins


  • 150g pancetta
  • 200g sprouts, cleaned and cut into quarters
  • A good helping of butter
  • 200ml chicken stock
  • Pepper
  • Salt to taste



Heat up a big pan, on low.


Fry off the pancetta 'til crispy.


Throw the sprouts in and cover in pancetta fat.


Add the butter and let it all emulsify.


Add the hot stock and leave to reduce.


Add pepper and salt to taste.
