Festive, sweet and super cute! This Christmas gingerbread cookies recipe make the perfect festive snack.

  • 2 ounces brown sugar
  • 2 teaspoons ground Ceylon cinnamon
  • 1 1/4 teaspoons ground ginger
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon sea salt
  • 4 ounces light corn syrup
  • 1 1/2 ounces unsalted butter
  • 1/4 ounce vanilla extract
  • 6 1/4 ounces plain flour



Combine all the ingredients, except the flour in an electric mixer.


Mix together until smooth. Add the flour spoon by spoon and allow to mix together.


Once combined remove from mixer and knead by hand to a smooth dough.


Can be used immediately, or wrapped in cling film and stored at room temperature for 24hrs.


Preheat oven to 175c


Roll out between two sheets of silicon paper to suitable thickness for application, cut into biscuits, or house shapes and bake on a lined baking sheet for about 25 minutes, until golden and crisp.
